About The Chef
Our resident, Chef Chuck, is often referred to as the celebrity chef because of the originality and quality of the recipes he cooks-up.
From his delectable use of multiple spices and complementary sauces his many dishes are considered one-of-a-kind, and simply not available elsewhere. He delights his guests using authentic island flavors of curry, Jamaican jerk, allspice, ginger, cinnamon, nutmeg, garlic, onion and thyme.
The Calypso Story
When Lora and Chuck Ternosky arrived in south Florida, they were unable to find a great fish dinner with fresh fish appetizer, soup and main course all at one place.
In 1990, Calypo Restaurant & Raw Bar, with a Caribbean vibe was born. Since then, The Calypso has served individually prepared fun and festive foods of the Caribbean. Clients stop in during their trip to Florida from across the U.S. for a fresh fish fix!
Lora and Chuck have traveled the islands to do their homework about the best locations to purchase various types of fish. From the Turks & Cacaos and Bahamas to Costa Rico, they know the right places to get the tastiest fish in the Caribbean (including Conch and Yellowtail Snapper).
Locals consider The Calypso as their home away from home.
Many locals enjoy dining on the delicious Caribbean concoctions at The Calypso as much as three times a week. Other patrons come from the surrounding areas of Coral Springs, Boca Raton, Weston, and as far away as Homestead.
Owner Chuck, the executive chef, insures the recipes remain consistent from year to year --- and his clientele tell him so! Several customers have proclaimed, “It’s just like it’s supposed to be every time it’s always awesome.”
Best of all, everything is homemade from salad dressings, coleslaw, and potato salad, to tartar and cocktail sauce. Even the sandwich rolls are made at a local bakery and always baked daily. Desserts are made by Lora -- all from scratch.
